An excellent sun exposure, allied to the phenomenon of reflection caused by schistose soils, allows high concentrations, bringing about a full-bodied, rich, unique delicious wine. Small productions of excellent quality are expected.
Situated in Northern Ribatejo, quite near Tomar, Encosta do Sobral joined the best of its region has to offer with the possibilities the most advanced developments of oenology to better the wine growing and producing.
For several generations the owners have been dedicating to the vine growing and wine production. At the beginning it was purely familiar and the surplus was sold nearby. As time passed away some changes were operated with gradual increasement of the plantation of the vines, but in the late nineties, a reestruturation of the vineyards was operated and it has been totally redesigned. 70 hectares were reached and in a near future it will be increased due to the excellent situation of the place.
As a consequence of this remodelation a new cellar, with the most recent technology was built. It's in Outeiro, a small village at 8 km from the city of Tomar.
In order to take advantage of this terroir of election, it was chosen the whole vine varieties that gather traditional regional grape varieties and international noble ones.It was planted Fernão Pires, Arinto, Malvasia Fina and Chardonnay for the white wine production ande for the red one, it was chosen a great number of grape varieties, such as Aragonês, Camarate, Castelão, Touriga Franca, Touriga Nacional, Trincadeira Preta as national varieties and Cabernet Sauvignon, Syrah and Merlot as international ones.
The used technologies are: fermentation of skin, with control of fermentation time for the white wines and fermentations on skins with long macerations for the red ones. They go ageing in French oak barrels.
Due to a protocol with Instituto Superior de Agronomia/Universidade Técnica de Lisboa, Encosta do Sobral counts with a privileged connection to the academical world for the definition of viniculture technology to apply in its vineyards and for the elaboration and accompanying attendance of actions of experimentation and divulgation.
